You'll probably need to modify
http://www.uclinux.org/pub/uClinux/ports/arm7tdmi/
This uClinux port. In the best case you only have to change some startup
code, and set some environment variables, like the amount of RAM
To make it usable, you'll also need to write drivers for the hardware
I wouldn't count to much on it though, 256 kb of ram might not be enough
to get it to work without extensive rewriting stuff
IF you get it to work, please do not submit it to slashdot twice, seeing
2 posts of uClinux ported to the Ipod is enough
