1) Yes, as was said earlier, when something gets stolen from you, the thief will almost undoubtedly not have it when/if you kill him. The real reason is that the game was not designed to handle storing whatever you had stolen until you kill the thief to retrieve it. (Especially since it can happen multiple times in a single battle.) So, if you like, and if it makes it easier, use whatever "explanation" you like. Perhaps during the battle some of the booty gets dropped or if it's an item gets damaged. Fortunately none of the thieves can steal any of the "keys" (real or figurative) which would keep you from finishing the game.
2) I actually have won the game with a single, lone thief. This was right at the end of the playtest. You are thinking of progressing WAY too quickly if you are playing solo. I believe my thief was 9th level before going into the first dungeon (the tavern). And when he beat Kra'an it was at 26th level. He did not need to use the Wand of Rest he was carrying during the rather long battle. And yes I "cheated" by having Call Grizzly cast for him in town and getting him healed by the characters in town.
